Spiros Agious is Flya’s head chef, multi awarded with a Top Notch award, Greek Cuisine award and F&L stars in his resume, has more than 20 years working experience. Spiros is also featured as one of the 100 most important Chefs in Greece during 2010-20.
 
After his creative journey in well-known restaurants and kitchens around the world, having spent many years in Santorini’s gastronomic scene he decided to move his creative passion back to his hometown, Corfu. 

Spiros has created a menu with a distinct character that originates in Corfiot-Mediterranean cuisine with emphasis in Greek, high quality ingredients sourced from selected, Greek micro producers. Along with his experienced and enthusiastic brigade, offer unique tastes and introduces Flya’s guests to Corfiot and Mediterranean cuisine, guiding throughout service the uniqueness and produce origin, while explaining the techniques used to create each dish.

Flya’s mission is to offer a gastronomic experience designed in it’s entirety (food, services, ambiance) to be honest regarding the flavors and high quality. Flya offers an exquisite fine dining experience that is not frivolous yet gives the guest an image of Corfu island’s contemporary cuisine, heritage and culture in harmony with the environment.

SPIROS VOULISMAS
Our Group Executive Chef, Spiros Voulismas carries a wealth of experience and alongside his role as our Executive Chef, he is the President of Corfu’s Chefs Club. 

Raised and born in Corfu Island, Mr. Voulismas accumulated a vast amount of working experience in a plethora of hotels and restaurants around the world, such as Holland, Belgium, France and Athens to name a few, before he decided to return to his birthplace Corfu.

In cooperation with Chef d’hôtel, Spiros Agious they are the masterminds behind Flya restaurant’s concept and menu.
